Is it a bad thing when you make a new recipe or try a new decorating idea and your son says “Is this from Pinterest? Oh wait, of COURSE it is!” I don’t think so. I still love Pinterest. I’ve actually tried a ton of recipes and other ideas…most of them are good, some of them are not. I have decided that anything baked with bananas, besides banana bread, is disgusting.
I am sharing a recipe with you today that my whole family is obsessed with. We lovingly call them “Energy Balls…snicker, snicker!” because in my house you can’t say balls without laughing. Don’t even bother making a single batch of these. I make a triple batch and they’re gone within 3 days. But my mixer can only handle a triple.
The recipe says to mix it with a spoon or by hand, but I just use the paddle attachment on my mixer. I also mix in chia seeds (which is another thing I’m obsessed with) and sometimes Nutella and use natural peanut butter. You pop these in the fridge and you have an instant cure for the “IjustgothomefromschoolandI’mstarving” woes of a growing child.
Energy Balls
**makes about 10 balls**
1 cup oatmeal
1/2 cup peanut butter (or other nut butter)
1/3 cup honey
1 cup coconut flakes
1/2 cup ground flaxseed
1/2 cup mini chocolate chips
1 tsp vanilla
Mix everything above in a medium bowl until thoroughly incorporated. Let chill in the refrigerator for half an hour. Once chilled, roll into balls and enjoy! Store in an airtight container and keep refrigerated for up to 1 week.

Those sound awesome! I’m so intrigued by Pintrest, but I fight the lure because I’m in-over-my-head busy.
True story: Friend on Facebook: “I have a million dollar idea I’m giving up for free. Someone should invent a way to be able to make books from your Pins.” Me: blink. blink. Um, can’t you print them out and put them in a binder like I do when I find recipes I like on the internet?
